Soups

 

I’ve tried to make delicious, healthy soups for most of my adult life with little success. This year, I found a variety of soup mixes (mostly available at Whole Foods) and the inspired Oh She Glows website and cookbook by Angela Liddon. Most of the mixes only require about 15 minutes of prep time, but they do need to simmer for about an hour and a half.

The Oh She Glows recipes are worth the time and trouble, especially if you make a double batch and freeze half.

Sierra Soups Fresno Fog Split Pea Soup. For this mix, simply add water and cook for approximately an hour.

Frontier Soups Texas Wrangler Black Bean Soup. This is mix is wonderful paired with baked sweet potatoes. Top both the soup and the sweet potatoes with the Oh She Glow’s Cilantro Avocado Cream Sauce and chunky salsa. You’ll need:

1 purple onion

6 garlic gloves

4 c. low sodium vegetable broth (such as Trader Joe’s Low Sodium Vegetable Broth

1 c. orange or grapefruit juice

Frontier Soups California Gold Rush White Bean Chile Mix. Top with avocado, sour cream and salsa (if you like it spicy). You’ll need:

14 oz. can of artichoke hearts

6 c. low sodium vegetable broth

1 large sweet potato

 

Great Soup Recipes

Soul-Soothing African Peanut Stew.The Oh She Glows Cookbook by Angela Liddon.  p. 129. I omit the olive oil, and water saute the onion and garlic. I also reduce the vegetable broth by 1 c. for a thicker stew, and make a double recipe. This recipe freezes well.

10 Spice Vegetable Soup with Cashew Cream. The Oh She Glows Cookbook by Angela Liddon.  p. 137. I omit the olive oil, and water saute the onion and garlic. I make a double recipe. This recipe freezes well.

Cream of Tomato Soup with Roasted Italian Chickpea Croutons. The Oh She Glows Cookbook by Angela Liddon. p. 141. I substitute one spray of oil for the grapeseed oil, and omit the olive oil. I water saute the onion and garlic and make a double recipe. This recipe freezes well, though the texture is lumpy until it is completely reheated.

Tip:  For grilled cheese and tomato soup fans, pair with Life-Affirming Nacho Dip on bib lettuce leaves.

Smoky Split Pea Soup. Sun-dried tomatoes and smoked paprika are the secret ingredients in this Whole Foods recipe.
