    • Oil-free (except for negligible amounts of spray oils)
    • Paleo friendly (although legumes and intact grains are included)
  • Gluten-free (as an option)

Blueberry Pecan Pop’ems (Kid’s Favorite)

Prep Time: 10 minutes. Yield: 8 servings.

8 oz. (1 cup) of dried blueberries (such as Trader Joe’s Wild Dried Blueberries)

8 oz. (1 cup) of raw pecans (such as Trader Joe’s Raw Pecan Halves)

In a food processor, finely chop 1 oz. of pecans. Remove from food processor and place in a small bowl.

Add the blueberries and remaining pecans to the food processor and blend until the mixture begins to form a sticky mound, approximately 30 seconds to 2 minutes. Do not over blend or the pecans will form a butter and the blueberries will become gummy. Roll the mixture into 1 inch balls. Roll balls in chopped pecans. Refrigerate until serving.

 

Simply Berries Sorbet

Prep Time: 5 minutes. Yield: 2 servings.

3/4 c. grapes

12 oz. bag of frozen blueberries, raspberries or mixed berries

½ t. lemon zest

½ t. cinnamon

Place the grapes, then the berries in a Vitamix. Blend, while constantly pressing down with a tamper, for 30 seconds. Open the blender and scrape the sides. Replace the lid and blend again while constantly pressing down with a tamper until the mixture forms mounds, approximately 30 seconds more. Scoop into bowls with an ice cream scooper.

Chocolate Banana Soft Serve

Prep Time: 5 minutes if hazelnuts are soaked or Macadamia Nut Cream is prepared. Yield: 2 servings.

1 fresh (or thawed) banana

4 frozen bananas

2 T. Macadamia Nut Cream (Optional. See Staple Recipes.)

2 T. cocoa powder

Place the fresh, then the frozen bananas, Macadamia Nut Cream and cocoa powder in a Vitamix or other high-speed blender. Blend, while constantly pressing down with a tamper, for 30 seconds. Open the blender and scrape the sides. Replace the lid and blend again while constantly pressing down with a tamper until the mixture forms mounds, approximately 30 seconds more. Spoon into bowls.

Top with chopped hazelnuts, sliced bananas and flax, chia or hemp seeds.
